His high-profile clients include celebrities like Neil Patrick Harris, Debra Messing, Designer Naeem Khan, Singer Black Thought from the Roots and VIP clients like Wall Street Billionaire Larry Robbins. Charles has fed many celebrities including Kelly Ripa & Top Opera Singer Joyce Didonato.
Chef Charles worked as the executive chef for two high-end restaurants in NYC. French Restaurant Vis-à-vis in Brooklyn and contemporary fine dinning Village Prime in the West Village.
Originally hailing from the beautiful Island of Sri Lanka, Charles has grown up and lived in many cultures and traditions from across the world including Ethiopia, Nigeria, England, Mexico and the United States and these global influences continue to inspire him in molding his culinary fingerprint. Charles loves to merge cooking techniques and elements from all over the world to create unique and delicious foods that have grabbled the attention of many high-profile New Yorkers. Charles is known for creating his own unique brand of cuisine with an emphasis on innovation while incorporating complex layers of flavors and textures to each dish. Chef Charles cooking style is New American and attributes his secret to success by starting with high quality ingredients, Cooking with a healthy mindset and leveraging his natural ability to optimize flavors focusing more on using herbs and spices than fats and sugars when cooking. Charles has an MBA in Marketing and over 12 years of experience working for top Global Management Consulting firms and Advertising Agencies. This gives him the unique advantage of having a combination of Marketing and Business acumen with a strong Culinary and Hospitality background. Charles current main focus is catering to his NYC clients and spends his free time consulting for restaurants in the U.S and overseas.
